bamboo shoot/ takenoko 筍

Today let me introduce you an iconic Japanese ingredients.

In April we get many bamboo shoot/ takenoko 筍 from people around us (also for miso, in this few weeks, I was lucky enough to gifted HANDMADE miso from 3 of my friends!🎉).

Bamboo shoot have bitterness/ lye so we have to process it before using. I once tried without doing it to see whether this is really necessary and it was! I cannot describe well here but it had super-uncomfortable substance...🤪

Peel the skin off, boil with rice bran. While I was making the octopus dish (on the previous post), my mom made bamboo shoot sashimi (btw, sashimi refers not only raw fish but also ingredients thinly sliced and eaten as it is), stir-fried bamboo shoot. And ate with cod roe cream pasta❤️‍🔥
