Survival Cooking Class Series for non-Japanese residents

When an American acquaintance was about to return to the US from her five-year stay in Japan, she unexpectedly asked, "How do you cook rice?" She admitted that she didn't know how to cook rice or how to make miso soup, the fundamentals of Japanese cuisine. She should not have missed the chance! She just did not have the opportunity to learn. I want you to enjoy delicious and unique foods while you're in Japan! And that is how the new survival classes focusing on the seasons and unique Japanese ingredients came about.


Survival Cooking Class Series with Japanese hardcore local ingredients (held in English)

Sushi and ramen do not exemplify what we eat daily in Japan. We eat foods cooked with dried daikon, dried hijiki seaweed and shijimi clams, etc.
It is only natural that foreigners would tend to shy away from such unfamiliar ingredients. But they are what locals actually cook with. They have enriched today’s Japanese food culture, and most of them are considered to be "superfoods".

The class is intensive & intimate, we only have 6 seats per class available.

The Survival Cooking Class is a series of 18 monthly classes, with different seasonal recipes each month. You can join any or all of the classes in the series.

I am very excited to finally be able to offer this series of classes especially serving expats in Tokyo, using hardcore, traditional ingredients. Learn the cooking “survival” skills tourists will never know.


I've been going to Mayuko's Survival Class every month since summer 2021. Mayuko teaches us how to use ingredients we find in a typical Japanese grocery store. This class has been pure joy to take, and now I confidently make several authentic Japanese dishes at home. Even if you can only attend 1 class, it is well worth your time. (Kelly. I)

Classes are held monthly (except for vacation months), with a choice of several days in each month. Please book only one class each month. Each month will feature different recipes, but the classes on different dates within the month will teach the same recipe, so please book the most convenient day of the month.

How about trying the Basic Japanese Cooking Skills class first, to get a flavor of what the Survival Cooking Series is like?

You will learn the most basic and fundamental skills in Japanese cooking. No matter what Japanese dishes you make, you will rely on these skills: making Dashi (Japanese soup stock) and rinsing and cooking Japanese rice.

Dashi is used for countless dishes such as miso soup, simmered vegetables, and dressings. Rice is a staple in Japan and it is considered as the most important component. The meal itself is called "gohan" in Japanese, which means "cooked rice". You will enjoy these most fundamental staples along with two traditional dishes.

This class is especially made as an introduction to the Survival Cooking Series. For guests who join the Survival Cooking Series, this class is not mandatory but we recommend taking it at some point, to deepen your understanding.
